See, potatoes and corn are usually my go-to’s, but it was pointed out to me that they’re technically starches. Now I have to say asparagus and string beans for it to really count
Well, I suppose it depends upon what the questioner was asking for. True, they’re starches, but when giving them a category of food, I’d still put them on the vegetable tier of the food pyramid. Being starches just makes them yummier since they’re worse for you. It’s like how there are lots of vegetables that are botanically fruits like tomatoes, eggplants, peppers, and avocadoes but they’re still lumped together with veggies because they’re savory instead of sweet. You can also say mushrooms are fungi and don’t fill any of the vegetable characteristics and chuck them off the list too.
In which case, if we’re looking for more traditional vegetable picks, my favorite vegetables are leafy greens that stand up to cooking like spinach, bok choy, and kale.
